Ingredients
For the Tart
- 3 tbsp onion jam
- 1 tsp balsamic vinegar
- 6 apple slices (from 1 crisp apple such as Honeycrisp or Pink Lady, thinly sliced into half moons)
- 5-6 sprigs fresh thyme plus extra for garnish
- ¾ cup Gruyère cheese, grated (or sharp white cheddar)
- 1 sheet frozen puff pastry, thawed and sliced into 6 even rectangles
- 1 egg, beaten (for egg wash)
- ¼ tsp olive oil (for baking sheet)
- Flaky sea salt to finish
Instructions
- Preheat Oven: Preheat your oven to 400ºF (200ºC) to ensure it reaches temperature for baking the pastry evenly and to a golden crisp.
- Prepare Onion Jam: Stir the onion jam with a splash of balsamic vinegar. This balances the sweetness of the jam, enhancing its flavor. Set this mixture aside.
- Assemble Tart Base: Line a baking sheet with parchment paper and lightly oil it with about ¼ teaspoon of olive oil to prevent sticking. On each puff pastry rectangle, place 6 layers consisting of thin apple slices, a few sprigs of fresh thyme, a thin smear of the prepared onion jam, and a generous sprinkle of grated Gruyère cheese.
- Seal Tart Edges: Lay the puff pastry over the layered ingredients and gently press down the edges with a fork to crimp and seal the filling inside.
- Apply Egg Wash and Season: Brush the tops of the pastries with the beaten egg wash to achieve a golden, glossy crust when baked. Sprinkle with flaky sea salt for a finishing touch and to enhance flavor.
- Bake the Tarts: Place the prepared baking sheet in the preheated oven and bake for 20 to 25 minutes, or until the puff pastry is puffed up and golden brown.
- Rest and Serve: Remove from oven and allow the pastries to rest for 2 to 3 minutes to set before carefully flipping them onto a serving dish. Garnish with additional fresh thyme and serve warm for the best taste experience.
Notes
- Use a crisp apple variety like Honeycrisp or Pink Lady for the best texture and flavor contrast.
- Gruyère cheese adds a nutty and creamy flavor but you can substitute with sharp white cheddar if preferred.
- Ensure the puff pastry is thawed properly before assembly to prevent cracking.
- The tart can be served warm or at room temperature and makes a great appetizer or light lunch option.
- Use flaky sea salt as garnish to add a pleasant crunch and enhance the overall flavor profile.
