Ingredients
Goat Cheese
- 11-ounce log of goat cheese
Dressing
- 4 tablespoons good quality olive oil
- 3 tablespoons chopped fresh parsley
- 2 garlic cloves, finely minced
- 1/2 teaspoon crushed red pepper flakes
- 1/4 teaspoon coarse sea salt (such as Maldon)
Instructions
- Prepare the goat cheese: Place the goat cheese log on a serving plate. Score it lengthwise and then a few times crosswise to open it up slightly, allowing the dressing to penetrate.
- Make and apply the dressing: In a small bowl, whisk together the olive oil, chopped parsley, minced garlic, crushed red pepper flakes, and coarse sea salt until well combined. Pour the dressing evenly over the scored goat cheese.
- Marinate and serve: Let the dressed goat cheese sit for at least 30 minutes before serving. This allows it to soften and absorb the flavors of the dressing. Serve with crackers or sliced baguette and enjoy!
